How to Make Rajma Curry
Step 1: Cook the Kidney Beans
Begin by adding the soaked kidney beans, black cardamom, cinnamon, bay leaves, cloves, salt, and water to a pressure cooker.
Cook the rajma on medium heat until one whistle. Afterwards, reduce the heat and cook on low flame for another 10 to 15 minutes or until the kidney beans become soft and tender.
Allow the pressure to release naturally before opening the cooker.
Step 2: Prepare the Tomato Mixture
Meanwhile, add ginger, garlic, green chillies, and tomatoes to a blender. Grind them into a coarse paste without adding water and keep it aside.
Step 3: Prepare the Masala
Heat oil in a heavy-bottomed pan and add cumin seeds. Once they begin to crackle, add the finely chopped onions and sauté until they turn light pink.
Next, add the prepared tomato and ginger mixture and cook for about 2 to 3 minutes.
Now, stir in turmeric powder, coriander powder, Kashmiri red chilli powder, and black pepper powder. Cook the masala for another 3 to 4 minutes while stirring occasionally. If required, add a little water to prevent the spices from sticking.
Step 4: Prepare the Rajma Curry
Add the cooked kidney beans along with their cooking liquid to the masala. Gently mash a few kidney beans using the back of a spoon to make the curry creamier.
Afterwards, stir in the tamarind water and butter for extra richness.
Allow the curry to simmer on medium heat for about 5 to 7 minutes so that all the flavours combine beautifully.
Finally, garnish with freshly chopped coriander leaves before serving.
How to Make Jeera Rice
Step 1: Cook the Rice
Wash the basmati rice thoroughly and drain the excess water.
Meanwhile, bring two cups of water to a boil. Add salt, lemon juice, and soaked rice. Cook over medium heat until the rice is approximately 70% to 80% cooked.
Drain the rice immediately and spread it on a large plate using a flat spoon to prevent it from sticking.
Step 2: Prepare the Tempering
Heat ghee in a non-stick pan and add cumin seeds. Allow them to release their aroma before adding the partially cooked rice.
Gently toss the rice so that the cumin flavour coats every grain.
Cover the pan and cook on low heat for another 2 to 3 minutes until the rice is perfectly cooked and fluffy.
