Ingredients

Serves: 10–12

½ cup cashews (kaju)

½ cup pistachios (pista)

1 cup sugar (or according to taste)

2–3 tablespoons milk powder

1–2 teaspoons ghee

1–2 drops green food color (optional)

½ teaspoon green cardamom powder

5–6 saffron strands (kesar)

1–2 tablespoons finely chopped cashews and pistachios

2–3 silver leaves (chandi ka vark) (optional)

How to Make Kaju Pista Burfi Recipe

Prepare the Nut Powder

Add cashews and pistachios to a blender jar. Grind them into a fine powder using the pulse mode.

However, avoid blending continuously because the nuts can release oil and become a paste.

Once ready, combine the nut powder with milk powder. Mix everything well and keep it aside.

Prepare the Sugar Syrup

Heat water and sugar in a non-stick pan over medium flame.

Stir until the sugar dissolves completely. Then add saffron strands and cook until the syrup reaches one-string consistency.

This process usually takes around 5–6 minutes.

Cook the Burfi Mixture

Now add the prepared cashew-pistachio powder mixture to the sugar syrup.

Keep stirring continuously on low to medium heat until the mixture becomes thick and starts leaving the sides of the pan.

At this stage, add ghee and green cardamom powder. Mix everything well and turn off the flame.

Set and Cut the Burfi

Grease a tray with a little ghee and transfer the prepared mixture into it.

Spread and level the mixture gently with a spatula.

Allow it to rest for 8–10 minutes. After it sets slightly, cut it into your preferred shapes.

Once the Kaju Pista Burfi cools completely, decorate it with chopped nuts and silver leaves.
