How to Make Rasmalai Recipe

Step 1: Prepare the Flavoured Milk

First, take full-fat milk in a deep pan and bring it to a boil.

Next, reduce the flame and cook the milk for 10–15 minutes until it reduces slightly.

Meanwhile, keep stirring regularly and scrape the sides of the pan to prevent the milk from sticking.

After that, add sugar, soaked saffron milk, and cardamom powder.

Mix well and cook for another minute.

Finally, allow the saffron milk to cool completely and refrigerate it for at least one hour.

2: Prepare Homemade Paneer (Chhena)

First, boil milk in a deep pan.

Once the milk starts boiling, turn off the flame.

Next, add lemon juice or vinegar gradually and stir gently until the milk curdles.

Then, strain the curdled milk using a muslin cloth.

Wash the paneer with cold water to remove the sour taste.

After that, hang the cloth for 30 minutes to remove excess water.

3: Knead and Shape the Rasmalai Balls

Transfer the prepared paneer onto a plate.

Next, knead the paneer with your palms for 5–7 minutes until it becomes smooth and free from lumps.

After that, divide the paneer into equal portions.

Roll each portion into a smooth ball and gently flatten it.

Keep all the flattened paneer discs aside.

4: Cook the Rasmalai Balls

Meanwhile, prepare the sugar syrup.

Add water and sugar to a pan and bring it to a boil until the sugar dissolves completely.

Next, add the flattened paneer balls into the syrup.

Cover and cook for 5–7 minutes.

After cooking, turn off the flame and let them rest in the syrup for 15–20 minutes.

5: Assemble the Rasmalai

First, remove the paneer discs carefully from the sugar syrup.

Gently squeeze them to remove extra syrup.

Next, place them into the chilled saffron milk.

Allow the Rasmalai to soak for a few hours so that the flavours develop beautifully.

Finally, garnish with chopped almonds and pistachios.

Serve chilled.
