  • 1½ cups basmati rice
  • ½ tablespoon turmeric powder

  • 1 tablespoon green cardamom powder
  • 8–10 almonds, thinly sliced
  • 8–10 cashews, sliced
  • 8–10 pistachios, thinly sliced

How to Make Zafrani Zarda Rice

Step 1: Soak and Partially Cook the Rice

First, rinse the basmati rice thoroughly.

Next, soak the rice in water for about 1 hour. After soaking, drain the water completely.

Meanwhile, bring about 2½ cups of water to a boil in a deep pan.

Add turmeric powder and the soaked rice.

Cook the rice for about 3–4 minutes. The rice should remain slightly undercooked because it will cook further with the sugar and ghee.

Drain the rice carefully and keep it aside.

Step 2: Roast the Dry Fruits

Heat about 1½ tablespoons of ghee in a pan over medium heat.

Add the almonds, cashews, pistachios, raisins, and chironji.

Roast them lightly until they become aromatic and lightly golden.

Then, transfer the roasted dry fruits to a plate and keep them aside.

Step 3: Cook the Zarda Rice

Now, heat the remaining ghee in a heavy-bottomed pan.

Add the green cardamom powder and sauté briefly.

Next, add the partially cooked rice and sugar.

Mix gently so that the rice grains do not break.

Cook over low to medium heat for 5–10 minutes, stirring occasionally.
