Raksha Bandhan is an Indian festival celebrating the epitome of the special bond between a brother and a sister. So usually sweets are made, So make some special sweet for your beloved brother which is quick and easy ladoo made with fresh narial(coconut) & gulkand and to make him feel special & loved.
Ingredients:
- 2-3 cups fresh coconut(grated)
- 300ml condensed milk
- 75-100gm milk powder
- 4tbsp gulkand
- 1/4tsp green cardamom powder
- 5-6 saffron strands
- 3-4 drops rose essence
- 1/2-3/4cup desiccated coconut
- 3-4tsp ghee
- 1-2tsp pistachios(finely chopped)for garnishing
Method:
First, take a nonstick pan or heavy bottom wok (kadhai), heat ghee on medium flame, add freshly grated coconut and roast on low flame stirring it continuously for 4-5 minutes.
Add milk powder and condensed milk to the coconut and mix very well.
Heat the mixture stirring constantly and it shouldn’t stick to the bottom of kadhai. Cook the mixture on low flame until the mixture starts leaving the side of kadhai. This will take time to 5-7 minutes.
When it cooks properly remove it from the flame and add some rose essence, mix well and let it cool.
Once the mixture cools down take a small portion of the mixture in the greased palm and flatten it, now place a tsp of gulkand, cardamom powder and saffron mixture in the center and roll into laddoos.
Then all ladoos are ready to roll in desiccated coconut, garnish with pistachios.
Delicious fresh coconut gulkand ladoos are ready!!!
