Custard apple, also known as sitaphal, is a sweet and creamy fruit that works very well in desserts. This custard apple kheer is rich, smooth, and easy to make at home. It combines milk, rice, and fresh fruit pulp to create a simple yet special dish. You can serve it during festivals or enjoy it as a comforting dessert after meals.


What is Kheer?

Kheer is a traditional Indian dessert made with milk, rice, and sugar. It is usually flavored with cardamom and nuts. In this version, custard apple pulp is added, which gives a natural sweetness and a light fruity taste. As a result, the kheer becomes more flavorful and unique.


Ingredients

  • 2 cups full-fat milk
  • 1/4 cup rice (basmati preferred)
  • 1/2 cup sugar (adjust as needed)
  • 1 cup custard apple pulp (seeds removed)
  • 1/4 teaspoon cardamom powder
  • A few saffron strands (optional)
  • 2 tablespoons chopped almonds and pistachios

Step-by-Step Method

Step 1: Prepare the Rice

First, rinse the rice well under running water. Then, soak it in water for 15–20 minutes. After soaking, drain the water and keep the rice aside.

Step 2: Cook the Rice

Next, heat milk in a heavy pan and bring it to a boil. Once the milk starts boiling, add the soaked rice. Lower the heat and let it cook slowly. Meanwhile, stir occasionally so the rice does not stick to the bottom. Continue cooking until the rice becomes soft and the milk thickens.

Step 3: Add Sugar and Flavor

At this stage, add sugar and cardamom powder to the mixture. If using saffron, soak it in a little warm milk first. Then, add it to the kheer for extra flavor. Stir well and cook for a few more minutes until the sugar dissolves completely.

Step 4: Add Custard Apple Pulp

After that, switch off the heat and let the kheer cool slightly. Once it is warm and not hot, gently mix in the custard apple pulp. Stir slowly so the pulp blends well without breaking too much.

Step 5: Garnish and Serve

Finally, add chopped almonds and pistachios on top. You can serve the kheer warm for a rich taste. Alternatively, chill it in the fridge for a few hours and enjoy it cold.

  • Remove seeds carefully: Take your time to clean the pulp for a smooth texture.
  • Do not add pulp to hot kheer: Otherwise, the milk may split.
