How to make Creamy Rice Kheer – A Timeless Indian Festive Delight

In India, it’s a tradition to begin something new with a sweet dish. So, to mark the beginning of my food blog, here’s my first recipe: Rice Kheer, also known as Rice Pudding.

Kheer is not just a dessert; it’s a part of our festivals, celebrations, and rituals. Whether it’s a festival, puja, or auspicious occasion, Kheer is always present on the table. Across India, it goes by many names:

  • Rice Kheer in North India
  • Payasa in Eastern India
  • Payasam in South India

Whatever the name, the essence remains the same—a creamy, sweet indulgence that’s loved by all.


Why Basmati Rice for Kheer?

For this recipe, I recommend using India Gate Basmati Rice (small grain) as it lends a wonderful aroma and texture to the Kheer. It’s perfectly suited to achieve the ideal consistency and richness in this dessert.


Rice Kheer Recipe

Serving Size: 6 to 8
Total Time: 1 Hour


Ingredients:

  • ½ cup Basmati Rice (small grain) – Buy here
  • 1 liter full-fat milk
  • ½ tsp ghee
  • 1 box sweetened condensed milk
  • ½ tsp saffron – Shop now
  • 1-2 black cardamom pods
  • 2-4 green cardamom pods
  • Sugar to taste – Get it here
  • Chopped nuts (almonds, raisins, pistachios, grated dry coconut)
  • 1-2 drops rose water

Instructions:

  1. Soak the Rice:
    Soak the rice for 10-15 minutes to soften it. Meanwhile, soak the saffron in warm milk and set it aside to infuse the flavor.
  2. Prepare the Kheer Base:
    In a heavy-bottomed pan, heat the ghee on medium flame. Add the black cardamom pods for a subtle aroma. Strain the soaked rice and stir it into the ghee for 1-2 minutes until slightly toasted.
  3. Add Milk:
    Slowly pour in the milk, stirring constantly. Bring the mixture to a boil, then lower the heat and let it simmer. Keep stirring frequently to prevent the rice or milk from sticking to the pan.
  4. Thicken the Kheer:
    After 20-30 minutes, you’ll notice the milk reducing and thickening. Mash some of the cooked rice gently with the back of a spoon to enhance the creaminess.
  5. Sweeten and Flavor:
    Stir in the sweetened condensed milk and add sugar to taste. Keep stirring to dissolve everything evenly.
  6. Finish with Aromatics:
    Add cardamom powder, chopped nuts, raisins, and saffron-infused milk. Mix well and turn off the flame.
  7. Garnish and Serve:
    Serve the Kheer hot or chilled, based on your preference. Just before serving, sprinkle a few drops of rose water for a delightful fragrance.

Tips for the Perfect Kheer:

  • Use a heavy-bottomed pan to prevent burning.
  • Stir frequently to ensure the rice doesn’t stick.
  • Chilling the Kheer for a few hours enhances its flavor.
