🥗 Ingredients (for 3–4 servings)

  • 1 cup boiled & grated potatoes
  • ½ cup sama rice (barnyard millet) – soaked 3–4 hrs
  • ¼ cup sago pearls (sabudana) – soaked until soft
  • 2 tbsp roasted crushed peanuts
  • ½ cup curd (whisked)
  • 1 tsp green chilli–ginger paste
  • ½ tsp sugar (optional, balances taste)
  • Rock salt (sendha namak) to taste
  • ¼ tsp black pepper powder

For tempering:

  • 2 tbsp ghee
  • 1 tsp cumin seeds
  • 8–10 curry leaves

👩‍🍳 Method

Step 1 – Prepare the Batter

  1. In a large bowl, mix soaked sama ricesabudanagrated potatoesroasted peanutscurd, and green chilli–ginger paste.
  2. Season with rock salt, sugar, and black pepper powder.
  3. Adjust consistency – it should be thick but pourable like cake batter.

Step 2 – Tempering

  1. Heat ghee in a pan, add cumin seeds and curry leaves.
  2. Let them splutter and add directly into the batter. Mix well.

Step 3 – Cooking Handvo

Option A (Pan method):

  1. Heat a heavy-bottomed pan, and grease it with ghee.
  2. Pour batter, cover with lid, and cook on low flame until golden and crisp on one side.
  3. Flip carefully and cook the other side.

Option B (Air-fryer/Oven method):

  1. Grease a baking dish/air-fryer pan.
  2. Pour batter, drizzle some ghee.
  3. Bake/air-fry at 180°C for 20–25 mins until crisp and golden.
