🥣 Ingredients (Serves 4)
For Chapati & Puri Dough:
- 2 cups rolled oats flour (dry roast & grind)
- 1 -1/2cup fresh spinach, blanched & mashed
- 1 cup fresh coriander leaves, blanched & mashed
- 2 green chillies, finely chopped (optional)
- 1 tsp ajwain (carom seeds)
- 1/2 tsp turmeric powder
- 1 tsp jaggery (optional, balances Vata)
- 1 tsp oil (for smooth dough)
- 3/4 – 1 cup warm water (adjust for soft dough)
- Salt to taste
For Cooking:
- Ghee or light oil for shallow frying puris
- Tawa (griddle) for chapatis, heavy-bottom pan for frying
👩🍳 Method
- Prepare the flour: Dry roast rolled oats on a low flame until aromatic. Cool and grind into fine flour.
- Mix the dough: In a bowl, combine oats flour, spinach, coriander puree, ajwain, turmeric, jaggery, green chilli, salt, ghee, and oil
- Add water gradually and knead into a soft, slightly firm dough. Rest for 10–15 minutes.
- Divide the dough into 8–10 small balls for chapatis/puris.
- Shape gently: Roll each ball carefully (oats dough is delicate).
- Cook:
- Chapati: Dry roast on a hot tawa till golden spots appear on both sides.
- Spinach & coriander Puri: Shallow fry in medium-hot ghee/oil until puffed and lightly golden.
- Serve warm: Pair with curd, winter vegetable sabzi, or Ayurvedic chutney.
