Vegetable Upma

Upma is a delicious alternative to the usual eggs or cereal for the breakfast. Its vegetarian quick and easy with full nutrients. It digests slowly and high on carb vitamins fiber and provides lots of energy. semolina is made from whole wheat grain it is refined food, vegetable upma is a popular breakfast dish in India. Its very nutrients, tasty,  easy and quick to make it at home. Upma made with suji(semolina) and slightly spiced, vegetable, ghee or to make a tasty dish that is eaten breakfast, brunch, or as a snack. Upma has a soft mushy consistency and is served hot. Upma served with sambar or coconut, mint, tomato chutney.

Ingredients:

1 cup Suji (semolina)dry roast light brown

1 red Onion (finely chopped)

1-2 Green chili, 2-inch ginger piece(paste)

6-7 Curry leaves(finely chopped0)

1small Red tomato(finely chopped)

3/4 cup Fresh coriander(finely chopped)

1 cup Fresh vegetables(carrot, peas, beans,1 small potato)finely chopped and steamed

7-8 Cashew  halved

1 tsp Roasted chana dal

1 tsp Urad Dal

1 tsp Mustard seeds

1 dry Red Chili

3/4 tsp Kashmiri Red chili

1-2 tsp Ghee or oil

1-2 tsp Lemon juice

Salt to taste

Water as per required

Method:

Take a pan or non-stick kadhai heat ghee or oil, fry cashew remove it put aside, add mustard seeds, chana dal, urad dal, dry red chili small pieces splutter add ginger-chili paste and curry leaves.

Add chopped onion saute 2-3 minutes till the onion turns translucent.

Add tomato, Kashmiri red chili powder saute 1-2 minutes add steamed vegetables, salt mix well and add semolina, water, cook on a medium flame.

Constantly stir at the same time so that lumps are not formed.

Stir for 3-4 minutes, add fry halved cashew and turn off the flames.

Serve vegetable upma hot with chutney or sambar.
