Ingredients

For the Dough:

  • 2 tsp Ghee (рдШреА)
  • ┬╝ tsp Carom seeds (рдЕрдЬрд╡рд╛рдЗрди)
  • Water as required (рдкрд╛рдиреА)
  • 1 tsp Oil (for kneading) (рддреЗрд▓)

For the Cauliflower Stuffing:

  • 1 medium Cauliflower, grated (рдлреВрд▓рдЧреЛрднреА)
  • Salt to taste (рдирдордХ рд╕реНрд╡рд╛рдж рдЕрдиреБрд╕рд╛рд░)
  • 4 Green chillies, chopped (less spicy) (рд╣рд░реА рдорд┐рд░реНрдЪ)
  • 1 inch Ginger, finely chopped (рдЕрджрд░рдХ)
  • 1 ┬╜ tbsp Coriander leaves, finely chopped (рдзрдирд┐рдпрд╛ рдкрддреНрддрд╛)
  • 1 ┬╜ tsp Prepared Masala (рддреИрдпрд╛рд░ рдХрд┐рдпрд╛ рд╣реБрдЖ рдорд╕рд╛рд▓рд╛)

For the Masala:

  • 2 tsp Cumin seeds (рдЬреАрд░рд╛)
  • 1 tsp Coriander seeds (рдзрдирд┐рдпрд╛ рдХреЗ рдмреАрдЬ)
  • 1 tsp Black peppercorns (рдХрд╛рд▓реА рдорд┐рд░реНрдЪ рдХреЗ рджрд╛рдиреЗ)

For the Butter Mixture:

  • ┬╜ inch Ginger, roughly sliced (рдЕрджрд░рдХ)
  • 3 Green chillies (рд╣рд░реА рдорд┐рд░реНрдЪ)
  • тЕУ cup Fresh coriander leaves (рдзрдирд┐рдпрд╛ рдкрддреНрддрд╛)
  • Salt to taste (рдирдордХ рд╕реНрд╡рд╛рдж рдЕрдиреБрд╕рд╛рд░)
  • ┬╜ cup Butter, cubed (рдордХреНрдЦрди)

Other Ingredients:

  • 1-2 tbsp Ghee (for roasting) (рдШреА)

For Assembling:

  • Curd, beaten (рджрд╣реА)
  • Pickle (рдЕрдЪрд╛рд░)
  • Onion (рдкреНрдпрд╛рдЬ)
  • Green chilli (рд╣рд░реА рдорд┐рд░реНрдЪ)

Procedure

For the Dough:

  1. Combine whole wheat flour, salt, ghee, carom seeds, and water to form a semi-soft dough.
  2. Knead well, apply oil, and set aside to rest.

For the Cauliflower Stuffing:

  1. Mix grated cauliflower with salt and let it sit for 5-10 minutes.
  2. Squeeze out excess water and transfer to a bowl.
  3. Add green chillies, ginger, coriander leaves, prepared masala, and mix well. Set aside.

For the Masala:

  1. Dry roast cumin seeds, coriander seeds, and black peppercorns.
  2. Grind coarsely using a mortar and pestle.

For Gobi Paratha:

  1. Divide dough into portions and roll out into rotis.
  2. Place stuffing in the center, seal edges with another roti, and roll out gently.
  3. Heat ghee in a pan, cook paratha until golden on both sides.

For Butter Mixture:

  1. Grind ginger, green chillies, fresh coriander leaves, and salt coarsely.
  2. Mix with butter and set aside.
