For the Dough:

  • 2 cups Whole wheat flour (गेहूं का आटा)
  • Salt to taste (नमक स्वाद अनुसार)
  • 2 tsp Ghee (घी)
  • ¼ tsp Carom seeds (अजवाइन)
  • Water as required (पानी)
  • 1 tsp Oil (for kneading) (तेल)

For the Cauliflower Stuffing:

  • 1 medium Cauliflower, grated (फूलगोभी)
  • Salt to taste (नमक स्वाद अनुसार)
  • 4 Green chillies, chopped (less spicy) (हरी मिर्च)
  • 1 inch Ginger, finely chopped (अदरक)
  • 1 ½ tbsp Coriander leaves, finely chopped (धनिया पत्ता)
  • 1 ½ tsp Prepared Masala (तैयार किया हुआ मसाला)

For the Masala:

  • 2 tsp Cumin seeds (जीरा)
  • 1 tsp Coriander seeds (धनिया के बीज)
  • 1 tsp Black peppercorns (काली मिर्च के दाने)

For the Butter Mixture:

  • ½ inch Ginger, roughly sliced (अदरक)
  • 3 Green chillies (हरी मिर्च)
  • ⅓ cup Fresh coriander leaves (धनिया पत्ता)
  • Salt to taste (नमक स्वाद अनुसार)
  • ½ cup Butter, cubed (मक्खन)

Other Ingredients:

  • 1-2 tbsp Ghee (for roasting) (घी)

For Assembling:

  • Curd, beaten (दही)
  • Pickle (अचार)
  • Onion (प्याज)
  • Green chilli (हरी मिर्च)


For the Dough:

  1. Combine whole wheat flour, salt, ghee, carom seeds, and water to form a semi-soft dough.
  2. Knead well, apply oil, and set aside to rest.

For the Cauliflower Stuffing:

  1. Mix grated cauliflower with salt and let it sit for 5-10 minutes.
  2. Squeeze out excess water and transfer to a bowl.
  3. Add green chillies, ginger, coriander leaves, prepared masala, and mix well. Set aside.

For the Masala:

  1. Dry roast cumin seeds, coriander seeds, and black peppercorns.
  2. Grind coarsely using a mortar and pestle.

For Gobi Paratha:

  1. Divide dough into portions and roll out into rotis.
  2. Place stuffing in the center, seal edges with another roti, and roll out gently.
  3. Heat ghee in a pan, cook paratha until golden on both sides.

For Butter Mixture:

  1. Grind ginger, green chillies, fresh coriander leaves, and salt coarsely.
  2. Mix with butter and set aside.
