This coconut cream pudding is soft, cooling, and deeply nourishing — the kind of dessert that doesn’t rush your body or your hormones. 🥥
Made without dairy, gently sweetened, and rooted in Ayurvedic wisdom, it’s my idea of mindful indulgence for 50+ and anyone choosing slow, conscious eating.

Ingredients
- Agar-agar powder – 1½ tsp (or 1 tbsp agar flakes)
- Thick coconut cream – 1½ cups
- Light coconut milk (optional, for balance) – ½ cup
- Jaggery powder or coconut sugar – 3–4 tbsp (adjust to taste)
- Water – ¼ cup
- Cardamom powder – ¼ tsp
- Pinch of Himalayan pink salt (enhances sweetness)
- Rose water or vanilla extract – ½ tsp (optional)
For topping (optional):
Toasted coconut flakes, chopped pistachios, rose petals, or mango cubes (seasonal)
Method
- Bloom agar-agar:
In a small pan, mix agar-agar with water. Rest 5 minutes, then heat gently until fully dissolved (no granules). - Warm coconut base:
In another pan, add coconut cream + coconut milk. Warm on low heat—do not boil. - Sweeten & flavour:
Add jaggery, cardamom, and salt. Stir until melted and smooth. - Combine:
Slowly pour the hot agar mixture into the coconut base, stirring continuously. - Set:
Switch off the heat, add rose water/vanilla. Pour into bowls or moulds.
Let it cool, then refrigerate 30–40 minutes until softly set.
