Stuffed Idli Recipe | Soft & Fluffy Masala Idli

Ingredients for Stuffed Idli Recipe

Idli Batter

  • 3 cups idli rice
  • 1 cup urad dal (black gram)
  • 2 tsp fenugreek seeds
  • Salt to taste

Stuffing Masala

  • 2–3 medium potatoes (boiled, peeled, and mashed)
  • ½ tsp mustard seeds
  • 1–2 pinch asafoetida (hing)
  • 1 tsp roasted chana dal
  • 6–7 curry leaves (finely chopped)
  • 1–2 green chilies (finely chopped)
  • ½ tsp ginger paste
  • ¼ tsp Kashmiri red chili powder
  • ¼ tsp turmeric powder
  • Salt to taste
  • 1–2 tbsp oil

How to Make Stuffed Idli Recipe

Step 1: Prepare Idli Batter

First, wash rice and urad dal separately until the water runs clear. Then, soak rice with fenugreek seeds and soak urad dal separately for 5–6 hours.

After that, drain all the water completely. Next, grind urad dal into a smooth paste, adding water as needed. Meanwhile, grind the rice into a slightly coarse paste.

Now, combine both batters in a large bowl and mix well. The batter should have a medium consistency. Finally, cover and let it ferment in a warm place for 8–12 hours or overnight.


Step 2: Prepare Stuffing

Meanwhile, heat oil in a pan over medium heat. Once hot, add mustard seeds and let them splutter. Then, add asafoetida, roasted chana dal, and curry leaves.

Next, add green chilies and ginger paste. Sauté for a few seconds. After that, add Kashmiri red chili powder and turmeric powder. Mix everything well.

Now, add mashed potatoes and salt. Cook the mixture for 4–5 minutes until well combined. Finally, turn off the heat and let it cool. Once cooled, shape the mixture into small patties.


Step 3: Make Stuffed Idli

First, add salt to the fermented batter and mix gently. Meanwhile, heat water in an idli steamer.

Next, grease the idli molds with oil. Pour a small amount of batter into each mold. Then, place one stuffing patty in the center. After that, cover it with more batter.

Now, place the idli stand in the steamer. Steam for 10–12 minutes on medium heat. Finally, turn off the heat and let it rest for 5 minutes.


Step 4: Serve

Carefully remove the idlis from the molds. Then, serve them hot with coconut chutney, coriander chutney, or sambhar.
