Samo rice is also known as Barnyard millet, it is known as a different name in a different place in Gujarat is known as Samak Rice. Samo Kheer is usually prepared during vrat/Puja of Navratri, Ekadashi, Ashtami, Purnima.
It keeps you full during vrat/fast and gives full energy.it is highly digestible fiber and also contains potassium, phosphorus, and amino acids. This millet rice is gluten-free.we can prepare pulao, tikki, and kheer, etc.
Ingredients
- 1/2 Cup Samo Rice
- 1lit Full Fat Milk
- 7-6 Almond Finely Chopped
- 4-6 Pistachios
- 1/4 Tsp Green Cardamom Powder
- 2-3 Saffron Strands {Soaked with Hot Milk}
- Sugar as Per Taste
Methods
- First Wash Samo rice 2-3 times and soak for 10-15 minutes
- Take a heavy base vessel or pan add milk to it as the milk starts to boil and Samo rice and stir nicely
- Cook on the medium flame until rice is cooked and it will take for 15 to 20 minutes to cook. Keep stirring the bowl at regular intervals.
- After 10- 5 minutes Samo rice will double in size and kheer will thicken
- Add cardamom and saffron in the milk
- Add sugar as per your taste and stir regularly.
- Samo Kheer is ready to be served.
