This Sweet Potato Shahi Kheer was born on a slow afternoon in my kitchen, when leftover boiled sweet potatoes met the desire for something indulgent yet nourishing. In Indian households, kheer is more than a dessert—it’s comfort, celebration, and love served in a bowl.

Sweet potato, often seen as humble, transforms beautifully when simmered in saffron-infused milk, cardamom, and crunchy dry fruits. This shahi version offers royal richness while remaining gentle on digestion—perfect for women’s health, festive vrat days, or mindful indulgence.

🍠 Sweet Potato Shahi Kheer Recipe

📝 Ingredients

  • 1 large sweet potato (250–300 g), boiled & mashed
  • 1 litre full-cream milk
  • 2 tbsp khoya (optional, for shahi texture)
  • 3–4 tbsp sugar (adjust to taste)
    or jaggery powder – add at the end
  • ½ tsp cardamom powder
  • 10–12 saffron strands (soaked in warm milk)
  • 1 tbsp almonds, slivered
  • 1 tbsp cashews, chopped
  • 1 tbsp pistachios, chopped
  • 1 tbsp raisins
  • 1 tsp ghee
  • A few drops of rose water or kewra water (optional)

👩‍🍳 Method

  1. Prepare the sweet potato
    Mash the boiled sweet potatoes until completely smooth, without any lumps, to achieve a rich creamy texture.
  2. Boil & reduce milk
    In a heavy pan, boil milk and simmer on low till it reduces slightly and thickens (10–15 minutes).
  3. Add sweet potato
    Slowly add mashed sweet potato, stirring continuously to avoid lumps. Cook 5–7 minutes on low flame.
  4. Make it shahi
    Add khoya (if using), saffron milk, and sugar. Stir well and cook till the kheer becomes creamy.
  5. Flavouring
    Add cardamom powder and rose/kewra water.
  6. Dry fruits tadka
    Heat ghee, lightly fry almonds, cashews, pistachios & raisins. Add to khee

    Simmer 2–3 minutes more. Switch off the flame.
