🥗 Ingredients (for 3–4 servings)
- 1 cup boiled & grated potatoes
- ½ cup sama rice (barnyard millet) – soaked 3–4 hrs
- ¼ cup sago pearls (sabudana) – soaked until soft
- 2 tbsp roasted crushed peanuts
- ½ cup curd (whisked)
- 1 tsp green chilli–ginger paste
- ½ tsp sugar (optional, balances taste)
- Rock salt (sendha namak) to taste
- ¼ tsp black pepper powder
For tempering:
- 2 tbsp ghee
- 1 tsp cumin seeds
- 8–10 curry leaves
👩🍳 Method
Step 1 – Prepare the Batter
- In a large bowl, mix soaked sama rice, sabudana, grated potatoes, roasted peanuts, curd, and green chilli–ginger paste.
- Season with rock salt, sugar, and black pepper powder.
- Adjust consistency – it should be thick but pourable like cake batter.
Step 2 – Tempering
- Heat ghee in a pan, add cumin seeds and curry leaves.
- Let them splutter and add directly into the batter. Mix well.
Step 3 – Cooking Handvo
Option A (Pan method):
- Heat a heavy-bottomed pan, and grease it with ghee.
- Pour batter, cover with lid, and cook on low flame until golden and crisp on one side.
- Flip carefully and cook the other side.
Option B (Air-fryer/Oven method):
- Grease a baking dish/air-fryer pan.
- Pour batter, drizzle some ghee.
- Bake/air-fry at 180°C for 20–25 mins until crisp and golden.
