Bitter gourd or karela have nutrient such as iron, magnesium, and vitamin to potassium and vitamin C.Kerala curry cooked in spice, sweet and sour with masalas. Its very simple to make with less oil and less time, this curry is ready into 10- 15 minutes.
- 250gm Bitter-gourd(karela)
- 150-250gm Red onion(thin long sliced)
- 1-2 Raw mango(grated)or1/2 tsp dried mango powder(amchur)
- 2tsp Mustered oil
- 1/2tsp turmeric powder
- 1 tsp Red Kashmiri Lal mirch
- 2 tsp Coriander powder
- 2tsp Fennel seeds(coarsely ground)
- 1/4Cup jaggery
- Salt to taste
Wash bitter gourd, cut thinly sliced, sprinkle a little salt on bitter gourd slices and mix it well. Keep aside 10-15 minutes.
Heat the oil in a deep non-stick kadhai or heavy bottom pan, add onion and saute over a medium-high flame for 1-2 minutes.
Then add bitter gourd, mix well, saute 1-2minutes cover with a lid and cook on low flame for 5-7 minutes stirring occasionally, add allspice, and raw mango, salt, jaggery mix it well2-3 second and cook4-6 minute on medium flame while stringing occasionally.
Bitter gourd vegetable is ready,
