Methi Pulao

Pulao is also called as pilaf and pulao it is an easy and healthy dish. Veg pulao is an easy one-pot Indian rice cooked with mix veggies & spices. there are a few different types of veg pulao today we would be preparing methi paneer pulao, it is very tasty, delicious, is mildly spiced and full of flavored. Methi pulao is one pot nutritious meal with fenugreek leaves and mix vegetable. We can serve with Boondi Raita,&Pudina chutney.

Ingredients:

  • 2cups Basmati Rice
  • 1 cup kasoori methi or fresh fengurick (finely chopped)
  • 1 Cup Cottage Cheese {Paneer}
  • 1 1/2cup mixed vegetable(peas ,carrot,french beans,sweet corn,capsicum)
  • 1-2Red onion(sliced thinly)
  • 2 medium size Red Tomato(Finely chopped)
  • 1tsp Ginger paste
  • 1/2 Garlic paste
  • 2-3green chilli paste
  • 1/4tsp cumin seed
  • 2-3 cardamom
  • 1/2 inch cinnamon
  • 1-2clove
  • 6-7Black peeper corn
  • 5-6string saffron(soak with hot milk)
  • 1/4tsp turmeric(haldi) powder
  • 3/4Kashmiri chilli powder
  • 2-3 Tbsp Ghee or oil
  • Salt as per requried
  • Water

Method:

  • First rinse basmati rice very well, then soak the rice15-20 minutes, drain the rice and keep aside.
  • Take a pressure cooker, add ghee on medium heat, and saute 1-2 minutes all whole spice as cumin seed, cardamom, cinnamon, cloves then add thinly sliced onions stir them till onion starts turning golden.
  • When the onion is ready to add ginger, chili paste stir 2-3 seconds &add tomato paste stir 1-2 minutes then add methi leaves, all vegetables&and add turmeric, Kashmiri chili powder and stir again1-2 minutes.
  • After that add soaked rice, stir and saute for 1-2 minutes, add 4 cups water with salt, stir one time more and cook methi rice on medium flame after one pressure cook 5 minutes more.
  • After five minutes turn off the heat, when the pressure settles down on its own remove the lid, add the saffron milk & Paneer and leave that pulao for 4-5minutes.
  • Methi pulao is ready, Serve hot with Curd, BundiRaita, or pudina-mango chutney.
