Nankhatai

Nankhatai is a traditional biscuits or cookies popular in India and Pakistan.It can make with egg or without egg.These are flavored with ghee, cardamom, saffron, and nutmeg.

Ingredients:

  • 1cup all-purpose flour or maida
  • 1/2cup chickpea flour
  • 1/4 semolina or suji
  • 1cup pure ghee or clarified butter
  • 1cup or 3/4powdered sugar
  • 1/2tsp saffron(soaked with hot milk)
  • 1pinch nutmeg powder
  • 1tbs. curd
  • 1tbs. milk
  • 1-2 pinch salt
  • 1/2tspbaking powder
  • 1/4tsp baking soda
  • 5-6fine chopped almond
  • 5-6fine chopped pistachios

Method:

First in a big bowl mix all the dry ingredients together very well, put it aside.

In a  bowl add ghee and caster sugar beat with hand whisker until light and fluffy and pale in color.

Now the add dry ingredients mixture, saffron milk, curd mix together and form a dough with the light hand (do not to give too much pressure).

Roll the dough into ball-like shapes and place them on the lightly greased cookies sheet.

Place the chopped almond and pistachios on top and press in lightly with finger.

Bake them in a  preheated oven at 180°C for around15 -17 minutes.

Nankhatai is ready.Enjoy with tea and coffee.
