Aloo ka halwa is generally prepared in north India especially for various religious fasts as Shiva Ratri, Navratri,  Janmashtami etc. Aloo ka halwa is a sweet dish, it is very tasty and delicious. Making potato halwa is very easy as it is prepared quickly.It is a dessert.

Ingredients:

4-5 boiled potatoes

3-4tbsp Ghee

1/2cup sugar

8-10 cashews

8-10 almond

1tbsp thin sliced pistachios

1/2tbsp green cardamom powder

Preparation:

First, peel the boiled potatoes and mashed them with the masher.Chop the dry fruits and roast with little ghee.

Heat 3-4tbspof ghee in a heavy based pan, add mash potatoes to it.Stir and roast on medium flame until the potatoes have started to leave the ghee aside, stir regularly otherwise it can stick to the pan.Then add sugar, some chopped dry fruits,  cardamom powder stir to mix every thing until the halwa turns thick in consistency, transfer it to a serving bowl.

Garnish with some pistachios and cashews and serve with steaming hot.

Kashmiri Dum Aloo a mildly spicy and tasty whole potato curry &cooked with healthy yogurt and tomato base.

Time-30 minutes

Serves:  4

Ingredients :

  • 10-12 small baby potatoes (IF YOU do not have small, u can use medium one cut into half)
  • 1 cup yogurt
  • Half cup of milk
  • 10-12 cashew (soaked in milk, and make paste)
  • 1-2 onion
  • 5-6 clove garlic
  • 3-4  inch ginger root
  • 3-4 fresh red tomato

Spice powder:

  • Kashmiri  red  chilly
  • Turmeric powder
  • Coriander powder
  • 3-4 black peppercorn
  • 3-4 green cardamom powder
  • 2 clove
  • One table spoon fennel seed powder

 Instruction: –

  • First, you boil the potatoes, peel them after that prick each potato with fork 3-4 time this helps in making the potatoes tender faster and helps in absorbing all spice.
  • Heat 3-4 tablespoon oil in a heavy bottom sauce pan then add potatoes and fry them until a bit crispy (little orangish red ).
  • Then you can discard half of the oil from pan and add onion ginger garlic paste sauté until onion start to turn soft but it should not change color. Put cashew paste and sauté it for 2 minutes after that put tomato puree and let all  spice cook for the  4-5 minute until oil is shown separate from the paste, reduce heat add yogurt cook another five-minute until its start to show oil separately. Add fried potatoes with one cup of water mix well and cook for five more minutes.
  • After that remove the pan from stove and garnish with cilantro & green chili. Serve with naan or rice.
