RICE PUDDING (KHEER)

My Food blog first post is a sweet dish as it is usually said to start something new with something sweet so here is the recipe for  Kheer or Rice Pudding.

In India, if it’s there is any festival or puja it’s very common to prepare Kheer. Kheer can be made in various ways and every region in India has a different name in north India as it is popularly known as rice kheer, in the eastern region it goes by the name of Pyasa & South India it’s called Payasam. Please find the below recipe for Kheer.

Serving: 6 to 8, Preparation Time- 1 Hour

Ingredients-

  • Half cup Basmati Rice (small one) You can take anyone but I am using because I find it good for  kheer
  • 1 Litter full-fat milk
  • Half-Spoon Ghee
  • 1 box sweet condensed milk
  • Saffron half-spoon
  • Black cardamom 1-2
  • Green cardamom 2-4
  • Sugar
  • Chopped Nuts (Almond, Raisin, pistachio, Grated dry coconut)Rose Water (1 to 2 drops)

Instruction- 

Soak rice for around 10 to15 minutes.

Soak saffron with little hot milk and put it aside. Take a heavy bottom pan add ghee put grounded black cardamom, strained the soaked rice and then stir rice up to 1 to 2 minute. Now slowly add milk to it. Let it come to a boil lower heat keep stirring if u will not do milk &rice stick to the bottom and side.

When milk starts thickening and reducing after 20-30-minute mash little rice with the back of the spoon.

After that, you should add condensed milk then put sugar into while stirring it continuously. Add cardamom powder, chopped nuts, raisins saffron. Switch off the flame. Serve hot& chilled. You can sprinkle Rose Water before serving to give nice fragrance and taste.
