GUJIA(Karanji)

The festival of color is here celebrate this Holi by treating everyone with this mouthwatering sweet dish.Gujia is a famous sweet made in India. Gujia is very much like that of samosa, however, gujia has a distinct shape and its sweet. The gujia is filled with a mixture of grated and roasted dry fruits, khoya, suji(semolina), and dry grated coconut.

Ingredients:

  • 2cups plain flour (maida)
  • 1/4 cup ghee
  • 1/2 cup mawa(khoya)
  • 1/3  cup suji(semolina)roasted(suji is optional)
  • 3/4 cup powder sugar
  • 8-10 almond(finely chopped)
  • 8-10 cashew(finely chopped)
  • 6-7  pistachios(finely chopped)
  • 1/3 cup grated coconut
  • 15-20 green raisins
  • 1tsp cardamom powder
  • oil or ghee(for frying)
  • 1-2sheet edible silver work

Method:

Combine plain flour, 1/4 cup ghee in a deep bowl, mix well with hand. Add lukewarm water in a small portion till the dough is little stiff then cover it up and keep it aside for10-20 minutes to set.

Combine the mawa, semolina, all dry fruits(roasted in advance), raisins cardamom powder  & sugar powder in a deep bowl and mix well.

Divide the stuffing into 15 -20 equal portion.

Meanwhile, the dough is ready, knead it, make a log break small lumps, roll out a portion of the dough, thin from edges with 3inch in diameter circle without using flour for rolling.Place a portion of the stuffing in the center, fold it over to make a semi-circle and press the side well.

Twist the side of gujia inwards to form pleats, or take the gujia mold, take out gujia from the mold keep it on a plate, cover with a cloth(damp muslin).

Heat the ghee or oil in a deep non-stick kadhai, fry a few gujias at a time, on a medium flame till they turn golden in color from all the sides, Drain on an absorbent paper.

As the gujia cool down, keep in an airtight container, and store and relish it for10 -15 days.
