Blueberry Syrup

When blueberries are in season try making this delicious syrup recipe. Blueberry syrup is easy to make.A homemade blueberry syrup is perfect with pancake, waffles, ice cream, stirred into yogurt, spread on your morning toast.

Ingredients:

  • 300g.or 2 1/2 cups fresh Blueberries
  • 1/2cups sugar
  • 1 1/2 tsp lemon juice
  • Lemon zest little
  • 1/2cup water

Method:

First,  wash blueberries, peel 1- inch strips of zest from the lemon then juice the lemon reserving1 1/2 tsp lemon.

Add blueberries and water in a non-stick saucepan over low flame.Gently mashes with the help of masher and simmer low flame for 15 minutes, stirring continuously.

Strain the juice into a big bowl, pressing hard on the solid.Discard the solid part.

Add blueberries juice to the saucepan and sugar, lemon zest, bring to aboilandsimmer10 minutes until the mixture thickness.

Add lemon juice, continue stirring and boil high heat 1-2minutes.

Remove from heat and allow the cool blueberry syrup to cool, pour into just cleaned bottles.Refrigerate it and use  it  within 2-3 weeks
